Cannellini Bean Pasta with Spinach & Tomato

  • 1 x Can Cannellini Beans, drained & rinsed 

  • 4 Cloves Garlic, sliced finely 

  • 5 Tomatoes, peeled, de-seeded & chopped

  • 500g Packet Spaghetti 

  • 3/4 cup Parsley, chopped 

  • 150g Spinach 

  • Salt 

  • Pepper


Step 1

Boil spaghetti with 2 teaspoons of salt until cooked. Drain and set aside. 

Step 2

Add garlic to fry pan and cook for 40 seconds on low heat. 

Step 3

Add tomatoes and cook for further 5 minutes covered. You may need to add a splash of water or chicken stock if the tomatoes start to dry out. 

Step 4

Add beans, stir and cook for further 3-4 minutes. Add spinach and parsley, stir and cook for another 2-3 minutes until spinach is wilted. 

Step 5

Stir in cooked pasta. Salt and pepper to taste and serve topping with fresh parsley.
